Roasted Cauliflower And White Cheddar Soup

This is an excellent soup to make on a cold night. It’s creamy and has a nice tang to it from the white cheddar. Have I told you about my white cheddar addiction? No? Well, I have a really big one. Someone needs to give me a cheese intervention! Enjoy! Ingredients: 1 small head cauliflower, cut into florets 2 tablespoons oil 1 tablespoon oil 1 medium onion, diced 2 cloves garlic, chopped 1 tablespoon thyme, chopped 3 cups vegetable broth 2 cups white cheddar, shredded 1 cup milk 1 tablespoon butter salt and pepper to taste Directions: Toss the cauliflower…

No Machine Needed: Easy Ice Cream

Sure, it may be 20 below where you live, but every day is a good day for ice cream. I eat low carb but enjoy a few bites of it. When I do treat myself to a bit of ice cream, picture When Harry Met Sally when Meg Ryan does the orgasm scene. That’s me! Since I only started to enjoy cooking (sometimes) last year, I don’t have any cool kitchen gadgets because I never needed them before. I still have an electric hand mixer and don’t see getting a stand mixer anytime soon. I don’t have an ice cream maker…

Peanut Butter Pie Cookies

Peanut Butter Pie Cookies

These are so good and fit into my low carb diet. These cookies are also gluten-free. They’re soft and light, delicious and irresistible, like little peanut butter clouds filled with little Ryan Gosling’s. After a day, the cookies were oily from the peanut butter but still just as good. I’m not complaining now that I finally found a low carb cookie recipe that’s actually edible. Store in the refrigerator for a few days. Ingredients: 1 cup peanut butter 8 oz cream cheese, softened 1/2 cup honey 1 tsp vanilla 1/4 tsp sea salt 1/2 tsp baking soda 1 egg Directions:…

Easy Apple Dumplings

It’s been cold and rainy where I live and we recently went apple picking, so I thought “mmmm, apple dumplings”. I’ve never made them before but I found an easy recipe. This recipe only has 7 ingredients and is so simple. Enjoy! Put a dash of cinnamonon on the crescent roll dough. Wrap each apple slice in the dough and place in a greased pan. In a…

Simple (Stovetop) Macaroni And Cheese

This is a recipe I found on Pinterest and it actually came out pretty good. I’m a Kraft mac n’ cheese snob but I scarfed this down. My first words when tasting it was “fuck yeah, that’s what I’m talking about”. Maybe I was saying that to the wine I was drinking? Hmmm. You will probably need to add additional milk to the macaroni before serving. With the seasoning, it’s really all about your taste buds. You can add any seasoning you like.  I also used rotini pasta since that seems to interest the little hummingbird more than regular elbow…

Individual Chocolate Cake with Vanilla Buttercream Frosting

This was a recipe I tried over the weekend. If you would like to make it gluten-free, try Domino Confectioners sugar. The directions seemed easy but since I’m a novice cook, I was a little worried about how it would come out. A few of the mini cakes sunk in the middle but when I added the frosting, nobody ever knew. It reminded me of Julia Child once saying “One of the secrets, and pleasures, of cooking is to learn to correct something if it goes awry; and one of the lessons is to grin and bear it if it…

Caprese Grilled Chicken

I absolutely love caprese salad so when I came across this recipe, I was so excited. My husband and I made this last night and it didn’t disappoint. I’m a balsamic vinegar addict and this will definitely be something I make again. Enjoy! Ingredients: 6 grilled boneless, skinless chicken breasts 1/4 cup balsamic vinegar 1 tablespoon butter 6 slices mozzarella cheese 6 slices tomato 6 large basil leaves Instructions: Prepare chicken on the grill. As chicken is cooking, pour balsamic vinegar into sauce pan or skillet and cook until reduced by half. Add in butter and stir with a flat…

Pumpkin Spice Frappe

Pumpkin Spice Frappe

This is a great way to kick off the Fall season. A pumpkin spice frappe. Yum! It’s less than 100 calories and approx. 2 grams of fat. Since I’m lactose-intolerant, I used almond milk. You can also omit the coffee so the little ones can enjoy one. Unless you want your kids hyped up on coffee and would like to hand them off to your husband once he gets home. Oooh, sounds like a plan! Let’s get to it! Ingredients: 1 1/2 cups coffee, frozen, partially thawed (or replace coffee with 6-8 ice cubes) 3 Tbsp. pumpkin, canned 1/2 tsp.…
